Sparkling wines

Sparkling wine is a wine containing a sufficient concentration of dissolved CO2 to produce bubbles and foam when the bottle is opened and the pressure suddenly drops. The physical bursting of the bubbles combined with the dissolved carbonic acid produces a tingling sensation in the mouth. We are talking about sparkling, pearl and sparkling wines which are distinguished by their carbon dioxide content.
